The Sauvignon Blanc 2005 was harvested from five different vineyards, spread over the Wairau Valley. These locations were selected to increase the depth of varietal flavour. Harvest started early April, with the young Sauvignon Blanc vines from our two most herbaceous vineyards and ended late April with the last ripe block of Sauvignon Blanc. Some of the grapes were hand picked then whole bunch pressed. A small percentage of the juice went through an indigenous yeast fermentation in old French oak. The remaining portion fermented a long and cool in stainless steel.
On the nose this aromatic wine shows uplifting bright gooseberry and ripe citrus. It is finely structured with multi layers of fresh squeezed passionfruit, pineapple, lime and some flower notes. The flavours on the palate are intense and long.
Huia Sauvignon Blanc is delicious with: oysters, prawns, scallops, mussels cooked in Sauvignon Blanc, marinated fish with dill, goat, sheep and feta cheeses.
