Huia Brut is a traditional method sparkling wine. The 1999 vintage is a blend of: 29 % Pinot Meunier, 33 % Pinot Noir and 38 % Chardonnay. The grapes were hand picked and whole bunch pressed. The juice was racked off to barrels for fermentation. A variety of wine yeasts were selected and a warm fast ferment was encouraged. The base wines underwent full malolactic fermentation and were aged on gross lees for 7 months in old French oak. The secondary yeast fermentation was conducted in the bottle. Huia Brut was aged on the yeast lees for three and a half years. The bottles were hand riddled over a six week period before disgorging.
Huia Brut is mid straw in colour with a fine persistent bead. Delicate stone fruit with fresh bread notes and hazelnut show on the lifted nose. The finish is long, lively and dry.
Huia Brut is delicious with: canapés, fresh and oven baked oysters, sushi and smoked salmon.
